What are Mycotoxins?
- The most simple definition for Mycotoxins is “Mould Poop”. Moulds eat the food they are on and excrete toxins called Mycotoxins.
- The mould is easy to eliminate via heat etc, but the mould toxin (Mycotoxin) is much harder to remove.
- There are several different types of Mycotoxins – the two that are most commonly found on coffee are
1. Aflatoxins
2. Ochratoxins - Mycotoxins are also found in many other foods and beverages that you consume daily (corn, black pepper and other spices, rye, beer, wine, chocolate). Your daily levels of exposure across all foods can be high.
There are three main reasons why you should care about Mycotoxins in coffee:
- Scientists consider mycotoxins to be worse than other food related risks you may be more aware of, like pesticide residues. These “experts” rank mycotoxins as one of the top 3 food related risks.
- The International Agency for Cancer Research (IARC) has classified Afalatoxin B1 as a Group 1 Carcinogen (definitely carcinogenic) and Ochratoxin A as a Group 2B Carcinogen (possibly carcinogenic). These are the 2 mycotoxins found in coffee. Quote: “Aflatoxin B1 is the most potent natural carcinogen known and is associated with both toxicity and carcinogenicity in human and animal populations…”

Governments Already Regulate This Don’t They?
- Don’t governments already regulate Mycotoxin levels by checking the foods and drinks we consume and imposing “safe limits”?
